In late June, Transportation and Traffic Management (TTM) hosted The James Mobile Education Kitchen for staff to enjoy healthy and tasty summer bites. The mobile education kitchen focuses on cancer risk-reduction through food choice and educates the community about preparing easy cancer-preventive foods.
During the event, TTM staff enjoyed a variety of food options, including:
- Tomato-basil Flatbread with Hummus
- Tangy Watermelon and Cucumber Salad with Feta
- Grilled Chicken or Plant Based Pesto Sliders
- Greek Yogurt Brownies/Marinated Fruit and Yogurt Parfaits
In addition to a cooking demonstrations and food samples, staff were provided with nutrition information and recipe cards for use at home after the event.
